How to discourage this behaviour?

I installed the Cat's litter tray in our loo right under the extractor fan,
which is constantly on. She pees in it ok, but a year past (she's 4) I got a
luxurious bit of green carpet surplus, and fitted it alongside the shower.
She uses it like a patch of grass (I think) and sh.ts on that - right under
the wash hand basin. It's not soft turds but quite firm and not really
smelly and are easily scooped off, but she has scratched and scratched until
the carpet is almost threadbare.
She also TRIES to sh.t on a green fireside carpet in the living room.
So, how can I stop this - or should I ditch the green carpets?  I tried two
litter trays - she just peed in both and went back to sh.tting on the
carpet.
The other problem caused by the kids when she was tiny - she used to follow
them into the loo and they'd pick her up and cuddle her while they were
sitting doing the business.  NOW she follows everyone - even visitors -
there is no lock on the door - expecting to be picked up and cuddled and if
she isn't picked up - she wails like a banshee. It's LOUD.

You've got me on the rugs but our three cats follow us into the loo, also.
Sometimes they even sneak up behind me while I'm "enthroned" and look in
behind. Doh!

A couple of my friends say theirs do too. Apparently it's not unusual.  One
has eight--I can't imagine being followed into the loo by 8 cats.  The other
does kitty rescue and has up to 20-some at any given time. Being followed
into the loo by 20+ cats is scary!
