Potential cat owner - advice needed

We want to get a cat.

My wife and I both work. I work 9.00 - 18.00, my wife works 9.00 - 15:30.

Would a new cat cope with being left alone weekdays 9 until 3? We would like
to get a kitten, but would like some advice on what would and would not be
appropriate, given our work schedules.

Can anyone help?

Excellent choice!

We're usually gone from 8:30am until 5:30pm or so on the weekdays.

I would suggest getting two cats, so they can keep each other company
while you're gone. If you decide to get kittens (it's kitten season, so
there's going to be lots of them at the shelter), get two littermates if
you can.
Other than that, make sure to get plenty of scratching posts of
different materials to train your cats/kittens to use those instead of
your furniture. :)

When we were faced with the same dilemma we got 2 kittens and they were fine
with each other for company.
