Should cats be feed a couple times a day or should food be left so it can be

In nature, cats are crepuscular predators of insects and small animals
(and birds when they can get them): they eat small amounts several
times during the hours around dawn and dusk.

Wet food should not be left out to spoil; kibble can be left out for
long periods until consumed or spoiled by drool, humidity, and
crushing.

Most cats will not overeat if food is continuously available.

From those principles, it would seem reasonable to feed wet food in
highly controlled amounts at controlled times to fat cats or others
who need special feeding; or in less controlled amounts and times for
ordinary cats, but still in the early morning and late afternoon.
Kibble eating cats can have their food changed once or twice a day at
your convenience.

Always keep fresh water available.  Keep all bowls clean.

Plastic bowls are often not recommended because the cats lick them and
ingest chemicals from the plastic that they probably shouldn't have -
stainless steel and ceramic are good, and easily washed.

Reality at my house (fifteen cats) is that Spooky is missing several
teeth and needs supplemental feeding that doesn't require using teeth;
Tigger is obese; and Ozy needs less kibble and more low ash food.
There isn't much I can do about Tigger, but Spooky is fed a separate
can of wet food on the washing machine (to cut down on other cats
stealing his food) in the evening while a second can is put down for
Ozy and several others who crowd around.  The main food is a large dog
size SS bowl of kibble changed each afternoon, plus whatever they
catch and eat (a couple of them are good hunters but don't eat their
catches - they leave them on the floor in various rooms).

just don't let the dish of dry food go empty, or your kitty(s) will let
you know about it ;)

They do, but it's not too obvious - mostly a large crowd of cats
leading me when I walk into the kitchen.  They continue through the
cat flap into the mud room where the bowls are so I generally open the
door to check, and sure enough, the bowl is empty.

That stainless steel bowl makes a good dinner bell: dropping the empty
pan onto the floor makes enough noise to attract cats from at least a
couple of hundred feet away, and pouring food into the bowl shifts the
still outside cats into overdrive.
