Mothra got over her URI really well. At least she did from saturday
until about tuesday last week. Then Tuesday night she started having a
stuffed up nose again and her eyes are runny.
On the other hand, her apetite certainly hasn't decreased (I'm starting
to think about restricting her food or she'll end up as a 50 pounder in
no time). And her energy level is lower than it was, but she still
walks around and plays if I come over and wave a string in front of
her...
So, should I be worried, or is this a normal course for recovering from
a URI?

Well, furby, I don't know for sure the answer to your question
but if it helps at all, I do know that in humans, including babies,
URI's due to virus causes can leave residual symptoms for
up to 8 weeks.
On the other hand, how can you ever be really sure that a new
infection isn't starting up? Perhaps if she has fever that might
be a consideration. Are her ears or nose or paw pads hot to
the touch? Or unusually pink with circulation? Is she
drinking water? Peeing well?
If you have any doubt, I'm sure a few quick questions
from the vet over the phone might sort it out. Whether
to be worried or not, I mean.

She seems perfectly normal except for the sneezing and the stuffy nose.
I have to give her more food every morning, so she is defintiely eating
well. Drinking is the same. She seems active (For Mothra, active is
defined as "Sleep until someone gets near you, pounch on them and play
for about an hour, then look at them like they woke you up and go back
to sleep. Repeat steps.").

Unless there is a lack of input (eating) or output (litter box) I wouldn't
worry. I foster for the shelter, and have had over 200 kittens in the house
over the past couple of years. If they are acting miserable, or go off
their food, then I bring them in to get medication. If they are eating and
acting fine, I let them ride it out.
As for restricting food, I wouldn't at this point. Growing kittens really
don't over eat. At six months, you might want to consider switching to
scheduled feedings (morning and night) so you can get a better idea when she
is going off her food.
Also, in case you haven't read my rants about dry food (which I do give to
kittens, cause I do like cats to know that dry food is actually food) you
