My neutered cat is 7 plus a month or two.  Should I be considering
changing his diet or is that 'senior' cat food just another marketing
tool to confuse and confound us? So far, he does not have a weight
problem.

Is he an indoor cat, or indoor/outdoor that hunts?
If he's active I'd keep him on his regular diet, upto and including
whatever fast food (mice) he's eating.

Do they really tell you to start them on senior when they're 7?  My cat
still eats regular food and she's 12.  She is not overweight either, and
she's an indoor cat.

It seems Vets now consider any cat 7+ to be 'senior'. To me, 7 is still
kittenhood because my cats generally live to their 20s. However, starting
peventive diagnostics at 7 might be a good idea- catch some 'senior' disorders
in their earliest stages. Most certainly it is good for Vets' revenues.
