I have a charcoal gray cat. Someone told me that the genetics of such cats are
weird, and that they sometimes have health problems as a result, but I haven't
been able to find anything about that.
Does anyone know anything about this, and could you point me toward a good
website?

I've never heard anything about charcoal gray cats having health issues. One
of my cats is a charcoal gray tuxedo and knock on wood, he's very healthy. I
really wouldn't worry about it as long as your kitty appears to be healthy and
gets regular vet checkups.
