Delilah and Stella often stop what they're doing and look up at the ceiling
... almost as if the laser pointer light is there or some such
distraction... but nothing. Does anyone else's cats do this and any idea
why?

Yes, Holly does that.  Then I will also stare intently at the ceiling
because she looks like she has seen an insect -- but I never see anything.

Pudge used to do this to the floor, and if I looked really, really
closely, I'd sometimes see one of those teeny ants.

But most of the time I think cats are having LSD flashbacks. :)

My theory is that it's a cat mind game - if they get you to look, they
win. :)

That's what they want you to think! Then they snicker at you
when you're not around.

Sure! It's because "cats see things that we can't."
(This is a funny cartoon by B. Kliban, done
in the '70s.)

My Gnarly, when we lived alone, loved to wait
until late at night when I was studying, then
stare intently at the bedroom closet door,
like there was something in there. :)

They are most likely looking at the tiny flying insects that you
carelessly allowed to come into your home! Man, are you dumb!
