I'm planning to make some chicken and salad for tonight; a nice, light
meal for a hot day. I have stuff for the salad: mixed greens,
tomatoes, avocado, orange bell pepper ... what I don't have is a clue
about salad dressings.
Mom claims she makes her salad dressing by mixing "olive oil, cider or
other flavored vinegar, and, you know, salt or something." Then she
puts in some milk if she needs to cut the flavor. When I do this, it
*never* turns out right -- either way weak or way salty, but never
flavorful.
Anyone have some proportions they can suggest to go with the
ingredients?

For the Apple Vinegar one or the Balsamic Vinegar. Pretty tasty, if a
bit complicated.

Sorry, I got here way too late. However, Red Wine Vinegar, oil, salt, pepper
and a little crushed garlic to taste is really very good.

But how much vinegar to oil?

I usually do like 1/4 cup vinegar to 1 tbsp. oil.

I'm probably too late w'/this, but a good all around dressing is equal parts
honey and almond or walnut oil. Then add a splash of balsamic vinegar. If
you have a can of orange slices, or tangerine slices, throw them in also.
Works with any mixed green salad.

Oooh, this sounds good, but I'm a big fan of tart as opposed to sweet
dressings ... still, I'll have to remember this.
