[OT] ISO pancake recipe

I love buckwheat pancakes.  While visiting my aunt, we went out to
breakfast at a place that had buckwheat/cornmeal pancakes.  Soooo
good.

Anyone have a recipe for buckwheat and cornmeal pancakes?

Alas, I have never prepared pancakes using buckwheat nor a combination of
buckwheat and cornmeal.  I do have a suggestion.  If you know the name of
the restaurant and they have a web site, you might send them email and
explain you don't live there but say how much you enjoyed the pancakes
(butter them up, so to speak!).  Then ask if they would be willing to share
the recipe with you.  You'd be surprised how many times this has worked for
me when I'm at home trying to figure out how something in a restaurant was
prepared.  Chefs like to brag a bit.  Good luck!

I vaguely recall seeing buckwheat pancake mix on sale in bulk in a health
food store nearby. I think they  even carry buckwheat flour if you
want to make from scratch. Prsumably you can just substitue flour in
a pancake recipe with buckwheat with possible some minor adustments.
But then I am not a good cook. I make my pancakes with the various
pancake mixes I found in the health food store.

I love Buckwheat pancakes.  In fact now I'm sorry I already had breakfast.
But I buy a mix from one of the mills.  Turn out better than any of the
recipes I had.

I also cheat on my cornmeal griddle cakes.  I just add a scoop of stone
ground cornmeal to a batch of Bisquick pancakes or plain pancakes.  And add
a little extra sweetener.  I usually add a couple of teaspoons of lemon
juice to my pancake batter to make it lighter, and then a spoonful of sugar
or honey or a packet of splenda to offset it.  The sugar helps them to turn
a nice brown.

Ah, so the sugar carmelizes.  You must like "sweet" cornbread, then :)  I
never add sweetener to my cornmeal griddle cakes, but then I'm going for the
savoury result.  To the finished griddle cakes I'll top with a bit of pure
maple syrup or pure cane syrup if I want a bit of sweet.  I'm not big into
sweet stuff.

I *adore* sweet cornbread and got my fix last night.  I went shopping
yesterday and had hubby meet me at Smokey Bones (new bbq joint that finally
made it up here).  My first experience @ Smokey Bones' was in my home town
of Jax, FL.  Me and my gal pals went for lunch...  and about died over the
cornbread serve w/honey-pecan butter.

Last night, we had baby back ribs, delicious asparagus (yes, the result was
funny smelling pee:), bbq'd beans, coleslaw and onion rings.  A slice of
southern heaven up here in upstate NY!!

It was.  I buttered that hot cornbread like the butter was frosting.  Nice
and thick.  I was so hungry when I got there, that I ordered the cornbread
b/4 hubby arrived.  It took everything in me not to eat the whole thing!!

<thinking about dusty treadmill in basement>

Oh and P.S.  Did you get new carpeting after Oscar?  I mean, the pic of
"Oscar Belly" on the stairs is so purrfect w/the flecks of a grayish hue in
the carpeting!!!  ;o)

Hah!  No, it's the carpeting from when we bought the house.  I think
it's "generic suburban house carpet."

Me too! I have not had them since my mom made them
when I was a child. She made them small and called them
"silver dollar pancakes.

Buckwheat is dark--cornmeal is something different. You don't
mean they are the same, do you?

I would love one for buckwheat pancakes (what IS
buckwheat, anyway?). I think there is a recipe on the
box of Jiffy corn muffin mix (the best!!) for cornmeal
pancakes!

These had both in them.  Cornmeal and buckwheat.

Well, I found a readymade buckwheat pancake mix at the Vitamin
Cottage, so I guess I'll be trying that.  Maybe I can mix in some
cornmeal and see what happens.

I haven't tried the recipes, but both buckwheat and cornmeal pancakes
seem to be found here: http://www.recipesource.com/
