OT: Calling on Cooks for Opinions/Ideas

jmcquown - 11 Jun 2005 19:14 GMT This will sound bizarre but the next art show is in Memphis next week (I live right outside of Memphis), yet my LLL asked me to book us a room. There reasons for this! Anyway, I got us a great deal at another Extended Stay Suites which is where we stayed in Lenexa, Kansas last week. It has a "full" kitchen. By that they mean a 2 burner stove (no oven), a full sized refrigerator, a microwave, coffee maker and a toaster. They provide glasses, flatware, plates, a covered skillet and a couple of saucepans.
I'll be bringing some items from my pantry and freezer to cook, but could use some ideas. Here's what I've thought up based on what is in my freezer (and I'll probably only cook twice, maybe 3 times). I mainly have seafood on hand.
Sole Piccata (need to buy a lemon and pignolis aka pine nuts) Pan-fried Tilapia with a white wine cream sauce with crawfish tail meat Pan-fried bay scallops - with or without a sauce
I have: olive oil breadcrumbs (fresh from sourdough in the freezer and also the boxed kind) garlic and onion all sorts of dried herbs & seasonings white wine all sorts of frozen veggies (broccoli florets, brussels sprouts, Fordhook lima beans) but we'll also be driving past a fantastic fresh veggie market each day
Since we did pasta last week in Kansas when I prepared chicken parm and another dish with chicken, broccoli and artichoke hearts, I'm thinking rice pilaf as the side for whatever I cook this time around. I can never prepare this dish for less than 4 people; we can reheat the leftovers in the microwave.
Oh, I also downloaded a restaurant menu template from microsoft.com just for grins and created a menu! He'll get a kick out the offerings of Chez McQuown! But when it comes to me cooking he says, "I paint; cooking is your department!" LOL Thank goodness we mostly enjoy the same types of food. I also don't want to deplete my food supply. So what are your thoughts for things to cook with limited kitchen resources? I can and will bring another pan or so if I deem it necessary but we still only have 2 burners.

Might be able to try varieties you don't usually if it's one you don't normally frequent. I've been getting the BEST bok choy from our farmer's market. I especially love the baby bok choy...raw or just blanched so it holds it's sweetness and crunch. I live for the first tomatos of the season! :) PatM

But it's huge! I was leaning towards the fresh veggies myself :)

Vine ripe are our favorites until my own are grown to an edible size and color, of course!! Mozzarella balls, a little olive oil, basil, a tad of garlic and viola!!
Of course, a good ole tomato sammich w/cheese, mayo, salt and pepper can be a delight in itself too!!!

It's already tomato season here; Ripley TN has wonderful tomatoes. They truck them in (it's not that far away) and they are vine ripened, not those slightly reddish rock hard things you find in so many stores.

I'm in upstate NY, so the vine ripened are here as the *first choice* of `maters. The beef steak `maters are SO hard... `specially during the winter months (but fine to use when making tomato sauces).
I was given an upside down tomato plant for my birthday. It's got nine `maters on it, so far... and tons of yellow buds!! The thing was a pita to put together, and it weighs a ton... (approx. 75 lbs.), but it's really looking good, and I've got more `maters than my girlfriend's regular `mater plants so far!!
The bestest fresh `mater dish I had was w/yellow, purple and green `maters (w/olive oil, basil & Mozz. balls) in Monterey Bay at the Whaling Station.

Okay, I will :) I have a waterbed; it has a slow leak on *his* side of the bed. If he sleeps in it with me, the addition of his 200 lb frame may result in his waking up in a puddle (or even a lake!). I don't even sit on that side of the bed to answer the phone because I've gotten a wet butt from doing so. I can't find the leak; it's on the underside of the mattress and I can't lift it. I need to buy a new one (regular mattress this time) but don't have the funds.
He also said he wants me to feel like I'm on the road with him, rather than worrying about fussing around my apartment which I thought was very sweet of him.
I have the seafood items in the freezer, the staples from the pantry (olive oil, etc.) and will take them over to the hotel from here. I *will* go with the fresh veggies from the stand and pick up a few other items as needed.
Any thoughts on my menu plans, Duke? I could always make SOS ;) We'll have a toaster!

I have a brand-new stove in this apartment - it's never been turned on, and I moved in February...
