Chicken Parmesan (or Parmegiana, I'm not quite clear)
2 boneless, skinless chicken breast halves fresh lump Mozzarella, cut off about 4 good slices 1/2 c. freshly grated Parmesan cheese seasoned breadcrumbs 2 cloves garlic, sliced 1/4 to 1/2 cup olive oil (as needed) 1 small jar of plain spaghetti sauce Mrs. Dash Seasoning (the table blend)
Cut a pocket in each chicken breast half and stuff a couple of slices of the fresh Mozzarella inside. Coat the chicken with seasoned breadcrumbs and let sit on a plate for a couple of minutes to allow the coating to adhere. Meanwhile, heat olive oil in a skillet. Brown the chicken very well on each side. Top with a couple more slices of the Mozarella and then pour spaghetti sauce around the chicken in the pan. Add the garlic to the sauce. Top the chicken further with grated Parmesan (pile it on). Sprinkle Mrs. Dash on top. Cover and simmer about 10-15 minutes to finish the chicken. Serve over angel-hair pasta with a crispy bread and a salad or vegetable. Serves 2; doubles easily.

As a westerner, who regards cats and dogs and horses too, as pets, this is abhorrent to me. I feel I want to do everything in my power to stop it. However, I am not a vegetarian and I eat cows, sheep and pigs so I'm not sure, ethically, that I have any right at all to object (although I desperately want to.) It turns my stomach to know what the dogs in Korea go through when they are taken out for a picnic and hanged alive to make their meat more tasty. Is it so much different from allowing cows to see the other ones in the slaughterhouse being stunned with a gun and having their throat cut just before it's their turn? As a westerner, I still cannot stomach the thought of dogs and cats to eat or skin, it seems so cruel and wicked. If I thought too hard about it, it would make me vomit. Why? We eat cows, sheep, pigs, deer etc, and happily wear leather. Hmmm. I am not a vegetarian. I have eaten my own surplus young male goats reared free range in the past, so I am totally unable to understand why I can't accept eating cats and dogs in another culture. But I just CAN'T. Maybe it's a fault in me, to not understand and respect another culture. I dunno.

That's a cultural difference I have no intention of bridging. My friend told me more than once her mother was tricked into buying a fur coat made of cats,(It was in the 1920's) and was completely horrified when she discovered what it really was. Yesterday was a bad day, and I was in a terrible mood. It was all to easy to step into troll mode. I apologize for any distress I caused anyone. I took things too far.

It is great to be home, although I can't do a lot except potter about and see to the cats and feed myself from the microwave. The cats seemed pleased I was home, although it's hard to say for sure. Kitty will always manage as she lived outside on her wits for years. She did at least open her mouth with her silent miaow when she saw me. Boyfriend was absent on my return but I did the "cat whistle" from the back door which brought him back in two minutes. His eyes grew wide like saucers when he saw me and he was in two minds whether to run away. The lad decided to be brave and trust his meowmie, he came in and ate. Then he forgave me for being away and pressed himself all over me.

I was a bad girl today (Sunday), and aide, her daughter and I went to this little breakfast place. I had a spinich & feta omelette with Amrican fries & bacon. Its this little house that was turned into a restaurant. Its always crowded and you never see adds for it, guess why.

It just occured to me this might be that weird political thing going on. Originally I just wondered if you were European and wanted to distinguish different types of fries. As far as I know, fries (pommes frites) are more or less the same throughout Europe and the US, except that people in Europe (as well as my parents) like to ruin them with mayo.

So she is being very subdued today, but I hope she'll soon bounce back (Frank doesn't...).
