Hi all:
I'm taking a break from all the slicing and dicing I've been doing for
tomorrow nights dinner party. While I was slicing and dicing, I got to
wondering if my menu was ok. Any of you foodies care to offer a tweak or
two?
My guests are our best friends, Elena (spanish speaking spitfire of
Colombian descent) and Jose (Spanish born but teenager years in Mexico -
Zacatecas (sp?)) and our new friends Shauna (extraodinarily nice mom of boy
my kids go to school with) and her husband Kursten (he is a nudist gardening
German man). We spends scads of time with our latino friends and I know
what they like to eat. Not so sure about Kursten, who I think might have
different ideas about food than I do.
I have been vegetarian for 4 years, until last month when I started to eat
some organic meat off and on.
... and the menu is:
Appetizers:
guacamole
black bean dip
deli green olives in herbs and with pimentos
slow roast tomatoes (tomatos, fresh thyme, olive oil and salt and pepper
roasted at 250 for 4 hours until chewy and moist)
crackers
... and I might get a pate for Kursten
red lentil soup with fresh rosemary, fresh lemon juice, feta, and black
pepper (Victor - this is in the cookbook)
whole wheat dinner rolls
organic salad with basil vinaigrette (to die for - Victor - this is in the
cookbook)
Black bean and chevre quesadila with two salsas:
- tomato basil
- mango
pumpkin pie for dessert
red wine
I've noticed that all of the above have a lot of tomato and cilantro in it.
There's lots of protein in the soup and black beans but I still figure that
I need something more traditional for our new friends to eat? Frankly, if
someone sliced and diced for 25 consecutive hours to make this for me, I'd
be in heaven; however, I think that other people might not find this so
great.
Any ideas of something I could slip in maybe in the appetizers or as a side
that could help round out the meal? Elena has a deathly allergy to tuna and
shellfish and Fred has anaphylactic shock to tree nuts. Do you think it
might be okay? I thought of going to the cheesemonger and getting some
amazing cheese - but there's already some in the soup topping and in the
quesadila and its so expensive!

Very weird. I don't like the smell of it cooking either. I won't eat any
animal factory meat - eat only strictly free-range organic chickens or
grass-fed organic cows. No pork. I am really disgusted by the way that
animals are raised for mass consumption. Ugh. I'm lucky I live in Alberta
with lots of good ranch land around for grazing. I'm happy to know that the
animals at least had a nice life out there in the sun and the rain on
pasture.
I have very low B12 and iron even though I have been supplementing. I
hadn't realized that B12 was associated with difficulty sleeping and I now
sleep through the night maybe 3 out of 7 nights now, which may be related to
increased B12 levels?

I wouldn't have said this unless you asked for suggestions
- your entire menu sounds yummy to me and yes, I can
imagine the trouble to prepare it all....but we're acquainted with some
German friends from Berlin..they
own a restaurant here and we eat there frequently. If
you want to throw in something the German dude is
familiar with get some veal and smoked wurst sausages.
Yeah, I know they're not organic, but I personally don't
know any Germans who are into pate'.
If you have any leftover sausages there is always Otis.

Thank you - that's a good suggestion. Didn't know that Germans weren't
necessarily fans of pate - maybe the french word should have tipped me off?

With guac and black bean dip I would be sure to have tortilla chips,
not just crackers. Pate is overkill, IMO.

Feta is an acquired taste. If the recipe doesn't call for it IN the
soup (melted) I would serve it on the side.

I agree, but I would serve a meat appetizer or a side to the quesdillas
- like a grilled chicken skewer or grilled shrimp. You can grill these
ahead of time and reheat in the oven(or do them on a George Foreman.)

I would do a chicken skewer. Marinate some chicken cubes in a jerk
sauce or a zesty Italian dressing. Skewer on wood skewers and grill
until done. Easy and yummy, and not too costly.

Tortilla chips are on the menu with the dips, don't worry! I wonder about
having too much food too.

Thanks - the feta is an optional topping. I have to post this recipe after
the party - it is sooooo yummy!

Thanks - I tossed up between the sausages and the chicken. I had some
organic chicken in the freezer so I'm marinating it in a greek/lemony sauce
and grilling on my Foreman knock-off. Thanks for the idea!

Dinner's at 6 PM and I'd love to see you there :D One day you will have to
come and visit and give me the chance to cook for you and Tom. Then again,
I'm not sure that I could stand the two of you moping about missing the
Fantastic Seven :-(
And Otis would probably appear totally normal to you, just like he did to
Britta and Dennis. You'll think I'm a fiction writer :-(
Yes, I'll have to send you the page numbers of our favourite recipes in the
book. For anyone else who's interested, it is the REBAR cookbook, published
from a vegetarian restaurant in Victoria, British Columbia, and it is
*amazing*. The pasta dishes are pretty weak actually but everything else is
unbelievably good! Even my carnivore husband looks forward to Rebar nights!
