OT: What happened to this recipe?

I had dinner guests tonight (missionaries from church), and served a
TexMex-ish casserole that usually goes over well (did this time too).
Problem is that it came out rather bland (even I thought so, and I'm a
spice wimp). Did I just hit a bad can of diced chiles or what?

Whenever my mom would make chiles rellenos, there would always be *one*
very hot pepper in the batch. My little sister would inevitably get it.
Chiles are not always predictable... :)

I have had similar experiences with poblano peppers (the variety
generally used for chiles rellenos), and once encountered a
hot-flavored bell pepper, much to my surprise.  I suppose that the
plant it came from might have been a hybrid between the bell pepper
and a hotter-flavored variety.

Chiles cross pollinate and if a hot one mixes with a sweet one, the
heat wins.

And how.
