Thought I would open this up to you fine people since there is a wealth
of experience here for the picking...

We are looking for a resort to travel to for a week in June for our 5th
anniversary - Hawaii, Mexico, Alaska or Western US.  We like to hike
and snorkel but have the kiddo (will be 17 mos. then), so can't do any
strenuous hikes.  Would prefer a nice pool, nice beach, walks and fun
day trips, but are open to new ideas.  All-inclusive not a must.

Places we have liked are Princeville on Kauai (a little too frou-frou)
and the Orchid at Mauna Lani on the Big Island (awesome snorkeling),
although it has been taken over by another chain, so I'm not sure what
it is like now.  We are also considering Dreams in Los Cabos, or the
Hyatt at Gainey Ranch in Scottsdale, AZ, but don't know anything about
either of them.

Anyone have any recommendations?  We are trying to keep the room fee
under $350/day but are flexible (to a point!).

TIA for any help!

How about Cozumel, Mexico? Cabo San Lucas is very nice, but the ocean is
cold there, whereas Cozumel is in the beautiful caribbean. :)
This one looks nice:

That's exactly what I was going to say.  Cozumel was the nicest place we've
ever visited - much nicer than Cancun which was way to tourist-y.

I had a really bad experience at Cozumel. :(  I had all my traveller's
checks stolen and almost drowned.  I don't think I want to go back. ;)
It is a very nice place, though.  Isla Mujeres was a fun day trip.  One
problem with Cozumel is that the reefs are over used and are dying.  At
least they were when I was there 7 or 8 years ago.  Do you know if they
have recovered at all?

Well, next time skip the traveller's checks (stick to credit cards and
your ATM card) and make sure to have a flotation device handy... ;-)

I have heard the reefs are in very good shape, apparently they have some
serious conservation programs over there.

Yeah, when DH and I went there were signs all over the beaches asking you to
please *NOT* swim with suntan lotions, or any other perfumes or lotions on
your skin.

Have you thought about a cruise around Hawaii?  We did this a few years
ago.  We flew into Honolulu and boarded the ship.  Stopped at an island
just about every day --got off, did fun stuff, and got back on.  We
loved it.  We've also done several caribbean cruises.

I think out next land vacation will be to Grand Cayman.  Sounds like
they're recoverng nicely after last year's hurricanes and that 7 mile
beach is huge now.
