Oh, all right.
So, we bought a big bag of yellow, orange, and red bell peppers at Costco this weekend. Now we have to figure out what to do with them. I like my mom's bell pepper salads, but I've never been able to make them work for me.
Here's what DH did last night:
Cut an orange bell pepper into short strips and put them into two bowls, one for each of us
Liberally applied rice vinegar to the strips, enough that there was a small puddle of vinegar at the bottom of the bowl
Sprinkled just a little bit of sugar on top
Mixed it all up and let it sit for about 20 minutes
Mmmm mmm good! I asked him where he got the idea, and he claimed it was more or less the cucumber salad you get at Japanese restaurants, just with bell pepper instead of cucumber.

Then we got more "sophisticated" and started making it by slicing onions and cucumbers, adding salt and letting it sit till the cucumbers wilt (about an hour) and then adding sour cream. And to get real fancy sprinkle it with some dill weed when you serve it.
Really not any better than grandma's plain old sliced fresh cucumbers out of the garden with salt and vinegar.

However the d*g was given new ammo last night and today was caught walking behind Huey squeaking his blue teddy bear. Pine Cone is hiding on the cat condo again, and QC has been hanging out in here. I think the score is currently even.

When you started in on the recipe, I thought you were trying to start a troll, and I half expected that pepper recipe to be stuffed with cat meat. lol
I'm not a pepper fan, but it sounds like it'd be yummy for one who is. :)

I used to eat bagels with cream cheese and salted tomato slices, but I haven't done that in a few years.

Fresh tomatoes is one of the few things I miss about growing up on a farm. I remember being shocked when I found out that city folks have to pay for them.
