All this talk about fair food....the big specialty here is Funnel cakes.
It's somekind of donut batter that they drip into a deep fryer in kind of a
lumpy bumpy donut and then put powdered sugar on it. I have to say, they are
awesome.

It's all regional, isn't it? Here you couldn't have a street fair
without humongous sausage and pepper sandwiches. Mmmmmmm. ;)

I've never had a Funnel Cake. When they have fairs and carnivals down here
they are a big thing with the food vendors but I'm not really into sweet
stuff. Another big thing is Kettle Corn - popcorn popped with sugar (not
like caramel corn, which I can handle in small doses). I never liked Kettle
Corn. The HUGE thing down here is Corn Dogs (aka Pronto Pups). I'm must
say I love Corn Dogs! Hot dogs on a stick dipped in a cornmeal batter, deep
fried. (I understand in some places they use a pancake batter.) Definitely
not health food. They also serve fried turkey legs. A friend of mine
likened it to eating like one of the Flintstones - walking around gnawing
meat off this huge drumstick. LOL I've only used them for smoking and
cooking with.
But with a nod to Theresa, more frequently I'm seeing "Italian Beef" with
peppers on hoagie buns. Of course I see most of these food vendors at the
art shows with John since I haven't been to a Fair in years.

The are tacos made on top of Indian bread, which is a puffy fried bread. I
like www.woodenknife.com best best best! Actually, I like it with just some
honey. Every once in a while I buy a box to indulge myself. This is
different than other recipes you see because it has timpsula (prairie turnip
flour) in it and it does make a big difference. You can see an Indian taco

Or to explain Indian Tacos another way, next to them, everything else is
health food.
They are soooo good.

Apropos of some of the discussion of Indian food, there's a closely
related dessert called jlaibi. It's basically made as you describe, with
a batter that becomes crisp. Rather than dust it with sugar, though,
they soak it in honey or rosewater, and let it cool. It looks like a
translucent, bright orange pretzel.
