Re: stuffed tilapia - did you see my follow-up post with my recipe for
stuffed flounder?  Will work with any mild fish and the stuffing is meant
for being baked with the fish, not fried as crab cakes.

I did see it and printed it Jill, thank you. Sorry I didn't respond
right away, like many others lately I'm fighting a long-term migraine
and don't get online much at night. I'm going to try your recipe this
weekend. I love fish. I don't remember ever seeing flounder in the
stores, although it might be in the frozen section. I don't care for
fishy fish (high fat/oil fish) but love the milder fish. I'll have to
look for flounder as well.

Stick with the tilapia - much cheaper than flounder and tastes about the

I was working in a seafood restaurant as a young woman and they served
stuffed flounder.  It was one of the first times I watched the cooks and
said to myself, "I could do that at home" and so I did.  It's excellent!
Vary the stuffing any way you wish - you might want to add sauteed onion or
strips of red bell pepper to the stuffing.  Sometimes I add the shrimp, most
of the time I don't.

My favorite fish is orange roughie (just about the only fish I like besides
catfish and I only like that fried so it's not good for me), but we don't
eat it much because it's way too expensive.  Is there another fish that
tastes a bit like orange roughie?

I don't know but I am a catfish FIEND! I actually bought a deep
fryer to fry catfish better. :) Ever use the breading "Louisiana
Fish Fry?" It is mostly corn flour (not meal!) and garlic and other
spices. Mmm, Mmmm, Mmmm!!! If you like Orange Roughy I
might need to try that too.
