Fresh tomatoes don't look very good yet so I used some jarred (Paul Neumann's) red sauce and doctored it up with garlic and basil. More cheese on top. It tasted fine. I think I just added too much sauce. It was hard to tell it was eggplant. More like sauce with some sliced stuff under it LOL Did you do the asparagus/salmon pasta thing or go with crepes?
