A friend and his wife from another newsgroup will be in my area in a couple
of weeks, and we have agreed to meet for a meal.  I had originally thought
about going out, but after several weeks on the road, I'm sure they'd prefer
a home-cooked meal.  I've gotten out of the habit of really cooking (I
usually fix myself a chicken quesadilla and a salad for dinner), and don't
want to do anything too elaborate.

Does anybody have any suggestions as to what to serve them?

Do you have a slow cooker? If so, I'd recommend a hearty beef stew/soup.
Perfect for the winter season, exceptionally yummy, and very 'comfort food',
especailly if served with chunks of crusty bread to dunk.

And you can leave it to cook whilst you go out to pick them up or whatever,
and your house will be filled iwth a wonderful aroma when you guests arrive.

What type of food do you like?
Do you want simple prep time and cooking?

First you need to ascertain what they like to eat.  And do they have any
food allergies or things like that?

home made chicken quesadilla and a salad?  YUM.  That would be a good
meal to me.

Pam S. who usually makes spaghetti, lasagna, grills burgers and hot
dogs, or plays with polish kielbasa and sauerkraut.

Here's my "company" standby (everything goes in the oven at
the same time and bakes for half an hour to forty-five
minutes at 400 F):

Chicken Supreme:
    Arrange boned chicken breasts in a greased flat baking dish
(I allow 1 per person plus a couple of extras).  Top each
with a spoonful of some sort of creamy salad-dressing.
(Blue-cheese, Ranch, Caesar, whatever appeals to you.)
Sprinkle with grated Parmesan cheese, put in oven.

Potato casserole:
    In another greased flat baking dish, dump a package of
frozen "O'brien" potatoes.  Mix in a can of (undiluted)
cream of celery (or cream of mushroom) soup.  Top with
shredded cheddar cheese, put in oven.

Honey-glazed vegetables:
    put Sliced celery, sliced carrots, frozen green beans
(allow about 3/4 cup oer person)in casserole dish. Mix a
couple of tablespoonsful of soy sauce and honey with about 1
teaspoonful of ground ginger.  Stir into veggies, dot with
butter or margarine, put in oven.

Turn on oven when your guests arrive - the dinner cooks
while you enjoy cocktails/appetizers and conversation.  (I
have never served this menu that I didn't get compliments on
it.)  Bon Apetit!
