At my sister's and niece's

Nyah nyah nyah nyah to anyone who wanted an invitation to eat at my
niece's. I was invited to my sister's tonight and my niece had made a
lot of goodies, Karelian pirogi and a warm salad, and frozen yoghurt
(cranberry - she made it herself) and biscotti (that she'd baked
herself) for afters. She also made the pirogi herself. They are pretty
difficult to make, but they were delicious. She's such a good cook!

And I got to pet all three cats, Emil especially. He loves everyone and
wasn't shy at all. Kasper was a bit shy at first, but he soon relaxed
after I gave him a good scritching. Kira stayed downstairs for a long
time after we arrived, but eventually she ventured upstairs and
socialized with us. She still hates Emil, her own son, and she only
occasionally likes Kasper. She did roll around with a mousie and looked
cute. She's a very round little girl!

Kasper was hilarious as he made my niece fetch a toy for him. He would
only go after it if it went inside a box on the floor. Even when my
niece was shaking the toy some distance from the box, Kasper charged
into the box after it. if she threw it, Kasper dived into the box, and
my niece had to retrieve the toy herself, because it was nowhere near
the box. But Kasper had decided the toy and the box went together, so he
went charging into the box regardless where the toy was thrown. He's
such a gorgeous hunk of a cat, but such a goofball at the same time.

That just sounds like such a yummy evening.  Food and velvet cats.  Doesn't
get much better.

They're like little oval pies. The crust is made from rye sourdough and
the filling from rice pudding. You eat them with a mixture of chopped
boiled eggs and butter on top. I don't know, maybe it doesn't sound very
delicious to a non-Finn. They're a traditional food from the area of
Karelia, which we lost to the Soviet Union in WWII. Lots of Karelians
were evacuated to other parts of Finland, and they brought their food
culture along. Here's a picture of one, though the crust looks like it's
not made with rye, but wheat:

And here's a recipe, in English:

Karelian Rice Pasties with Egg and Butter Spread

Makes about 25

Rice mixture:
500 ml water
2 tbsp butter
250 ml short-grain glutinous rice
1 litre milk
1 1/2 tsp salt

Rye dough:
400 ml rye flour
150 ml plain flour
1 tsp salt
200 ml water

To glaze:
50 g butter
100 ml milk

Egg and butter spread:
100 g butter
3 hard-boiled eggs, mashed
50 ml chopped parsley

Put the water and butter into a saucepan. Bring to the boil and stir in
the rice. Simmer for 10 minutes, stirring occasionally. Add the milk and
stir until boiling. Simmer for about 50 minutes, until the rice is done.
Season with salt. Set aside to cool. Mix both flour, salt and water
together. Knead it into a dough. Roll the dough on a floured surface
until about 2 mms thick. Using a cutter, cut into circles of 8 cm (3
in.) in diameter. Roll the circles into thin crusts. A pasta machine can
also be used. Use some flour to help with the rolling. Fill the crusts
with a thin layer of rice mixture. Turn 1 cm (0.4 in.) of the side to
create an edge and pinch the edges. Bake the pasties at 300°C (570F) for
15-20 minutes. Brush with a butter and milk mixture and transfer to
soften under greaseproof paper and a tea towel. Eat hot with egg and
butter spread.

Egg and butter spread:
Mix the soft butter with eggs and parsley. Serve lukewarm.

I'd never thought of using my pasta machine to make little crusts like that!
I'm going to have to try it.

I think that's why I love cats.  They're sublime and ridiculous at the
same time.
